The Grape Harvest in Comenge.
In our winery we do not have a receiving hopper for the grapes, simply because it’s not needed. All harvest is done by hand and transported to the winery in small boxes of 15 kilos of capacity, ensuring that each cluster arrives intact.
Each of the 12,500 boxes of grapes we process over a vintage are selected in our first cluster sorting table where we can withdraw all clusters that do not have an excellent appearance. But we are not satisfied just with this selection. We know that in order to produce a quality wine it is essential to have only healthy and mature grapes, and nothing more.
To ensure this premise, we make a second selection of all the grapes from the harvest, a process which we pioneered in Spain in 2002. Our second selection table allows us to remove all plant debris that usually remains after the de-stemming of the cluster. Incredibly, about 110 million grapes are selected individually by the twelve people working at the second selection table.
