The Ageing of our Ribera Del Duero Wine
Bodegas Comenge only produces quality wines, aged at least for a year in oak barrels. These are essential for obtaining good wine. Thanks to the slow micro-oxygenation that occurs through the pores of the oak, the wine color will remain stable for many years, and the tannins of the grapes will be silk in our palates. Quality grapes deserve quality barrels, the best French and American oak. We know the master coopers who are behind our barrels and they are familiar with our wines and our style. This work hand in hand with them allows us to use the best barrels for each type of wine, since they are not all the same.
The wine which results from the well-taken care of elaboration in the winery, is equipped with great harmony of color and aromas and a powerful structure. These qualities also require careful ageing in the barrels that a great wine truly deserves. For it we chose, working hand by hand with the master coopers (barrel makers), to make barrels of French and American oak, that are of fine grain and toasted slowly at low temperatures.
Within our winery, in the ageing room, where the wine is stored and aged, we have more than 450 barrels for ageing; approximately 400 barrels are of French oak, and 50 are of American oak. The barrels are renewed every three years, to secure their maximum yield. And it is there, stored in the best wood, where the maximum expression of each of our estates is obtained, achieving a wine that conserves a unique character throughout the years.
